I'm Eddie Nickell, Chef/Owner of Bites & Bubbles (www.bitesbubbles.com), a renowned Contemporary American restaurant located in the vibrant Mills 50 District at Mills Park, near Downtown Orlando, Florida. Alongside my partner, Nicholas Olivieri, we have created a culinary haven that combines European influences with our unique twist. At Bites & Bubbles, we offer an unforgettable dining experience with a carefully crafted menu featuring a delightful selection of bites and bubbles, showcasing an exquisite fusion of flavors in both food and drink.

My Story

My passion for hospitality started at a young age when I embarked on my culinary journey at a Howard Johnson's restaurant in Ohio when I was just 14. Since then, I have honed my skills and expertise with Marriott International in Dayton, Ohio, and later received a prestigious offer from a renowned French restaurant. Throughout my restaurant and culinary journey, I have dedicated myself to the world of fine dining, serving in esteemed French establishments such as L'Auberge in Dayton, Ohio, The Down Under in Fort Lauderdale, Florida, and La Ville Maison in Boca Raton, Florida. I've also had the privilege of working at Primo Restaurant, by world renowned Chef Melissa Kelly.

 

Bites & Bubbles is not just a restaurant; it is a family-owned and operated establishment where Nicholas and I put our heart and soul into creating a memorable experience. In our restaurant, guests can enjoy a stylish yet relaxed atmosphere. The main dining room exudes an intimate charm, transporting guests to quaint spots in New York City or Paris, with only eight tables and a spacious bar. We also offer a covered patio, a lanai, and a rooftop dining area, each providing a unique setting to savor our full dinner menu, extensive wine list, and craft cocktails. Our menu changes regularly, allowing me to showcase the freshest ingredients available each day.

Throughout my culinary journey, I have developed a broad expertise in various types of cuisine. Some of my favorites include Southern USA, Southwestern, French, Asian, and Italian, just to name a few. I tend to embrace a fusion style of cooking, drawing inspiration from both the United States and Europe, incorporating a range of flavors and techniques to create dishes that truly excite the palate.

I take immense pride in providing a remarkable dining experience, where guests can embark on a tantalizing journey through a symphony of flavors.
